Mélange du Jardin, a fresh garden-herb blend for quark, salads and cold dishes
Mélange du Jardin is our garden-herb blend for fresh, cold cooking. We compose it in our workshop in Klingenberg am Main from chives, red onions, dill tips, lovage, garlic, parsley, chervil, wild garlic, paprika and tarragon. The character: fresh and herby with a fine onion depth and a subtle aniseed note from the tarragon that brings quark, salads and dips to life without overpowering them.
How to use
Mélange du Jardin is a universal herb seasoning for cold and warm dishes. Stir it straight into salad dressings and vinaigrettes, season quark, cream cheese and yoghurt dips for aromatic spreads, or scatter it over grilled vegetables and oven vegetables before roasting. Also for fish and seafood, for fried potatoes, baked potatoes and potato salad, in soups and sauces as a finishing note, and fresh over scrambled egg and omelette.
Important: The fine herbs release their aroma best when fresh. Scatter Mélange du Jardin over the finished dish or stir it into a cold base rather than cooking it for a long time. Shake briefly before use so the herbs are evenly distributed.
Recipe: herb vinaigrette for leaf salad
- Put 3 tbsp olive oil, 1 tbsp white wine vinegar or Gewürzamt house vinegar Churfranken, 1 tsp Dijon mustard and 1 tsp Mélange du Jardin into a screw-top jar.
- Add a pinch of salt and shake vigorously until the vinaigrette binds to a creamy texture.
- Pour over mixed leaf salad with cherry tomatoes, cucumber and fresh goat's cheese, optionally add a drizzle of Franz Keller's grapeseed oil, and serve immediately.
