Pepper blends from the Klingenberg manufactory – founded by Ingo Holland, now run by his son Kilian Holland
A good pepper blend is a unique taste experience: several varieties of pepper combined with aromatics such as lemon myrtle, tonka bean, or whisky oak barrel. At the Altes Gewürzamt, founded in 2001 by top chef Ingo Holland in Klingenberg am Main and now run by his son Kilian Holland, we compose ten pepper blends that accompany every stage of a dish – from the initial marinade to the final pepper accent on the plate.
Our absolute bestseller is the fruity Sieben, made from seven varieties of pepper and aromatics – perfect as a table and carpaccio pepper. The powerful Mélange Noir, with three varieties of black pepper, is the classic companion to steaks. Lighter and more delicate: the Mélange Blanc, made exclusively from white pepper varieties, is ideal for light sauces and salmon. With an oak barrel smoke note: the Whisky Pepper for game and braised dishes. Coarsely cracked: the Steak Pepper with garlic and mustard for a robust steak crust. Fresh and citrusy: the Lemon Pepper for fish, poultry, and Caesar salad.
Application in your kitchen
Pepper blends should be used as a finishing touch after cooking, sprinkled over the finished dish – in the pan or on the grill, the pepper and aromatics become bitter and lose their volatile components. Ideal use: after resting, over the sliced steak; at the table, over carpaccio; just before serving, over the sauce. Freshly ground from a pepper mill, the blends taste noticeably more intense. Related categories: the Pepper Collection with fine single varieties and the Grill & BBQ Spices for rubs and marinades.
Craftsmanship instead of industrial production – purely plant-based, without additives
Each pepper blend is composed from carefully selected single varieties of pepper and aromatics, in small batches in our manufactory. We consistently refrain from using flavor enhancers, anti-caking agents, and artificial flavors. All our pepper blends are purely plant-based and contain no animal-derived ingredients. Packaged in our signature green tin can – protected from light and airtight, so that the aroma is preserved for a long time.
Frequently asked questions about pepper blends
Which pepper blend should I try first?
Sieben is our bestseller and a versatile all-rounder – perfect as a table and carpaccio pepper. For steak lovers, the Mélange Noir with three varieties of black pepper is recommended.
What is the difference between a pepper blend and pure pepper?
Pure pepper is a single variety of pepper. A pepper blend combines several varieties of pepper together, often enhanced with aromatics such as lemon myrtle, tonka bean, or whisky oak barrel. The blends therefore have a more complex flavor.
How should I use pepper blends?
As a finishing touch after cooking, sprinkled over the finished dish. Freshly ground from a pepper mill for maximum flavor development. Never add them to the pan or on the grill – the pepper aromas will quickly become bitter.
Are the pepper blends vegan?
Yes. All our pepper blends are purely plant-based and contain no animal-derived ingredients.
How long do pepper blends last?
24 to 36 months when stored in a cool, dry place in the closed container. You can find the specific best-before date on the packaging. After the best-before date, our pepper blends are generally still usable – simply check their appearance, smell, and taste.
