The Gewürzamt House Vinegar Churfranken is a speciality of the Holland family: wine vinegar from our own cultivation on the steep slopes of the Klingenberg vineyards on the Main, bottled in our workshop on site. With 9 % acidity it brings a powerful, lively play of acidity that lifts vinaigrettes, salads and marinades to another level.

How to use

A classic for vinaigrettes and salad dressings, a dash of house vinegar, good olive oil, mustard and salt. Also ideal as an acidity anchor in marinades for sauerbraten, braised dishes and roasts. It refines cold sauces, remoulades and aspic. Also for seasoning stews, lentil salad and potato soup.

A dressing in two minutes

  1. Put 2 tsp house vinegar, 6 tsp olive oil, 1 tsp Dijon mustard, salt and pepper in a screw-top jar.
  2. Close tightly and shake vigorously until everything emulsifies.
  3. Pour over the salad straight away or keep in the fridge for up to three days.

9 % acidity is at the upper end for wine vinegar, most commercial vinegars have 5 to 6 %. This makes the house vinegar particularly lively and well suited to powerful vinaigrettes, sauerbraten marinades and anywhere the vinegar should play a clear role.
