Tomami #2 Tomate is a purely plant-based seasoning concentrate made from 100 percent fully ripe tomatoes, gently reduced by Tomami GmbH. Unlike the deep, round umami of Tomami #1, here the fruity, lively tomato is in the foreground: strong, acidic and with concentrated tomato fruit. A splash brings real, sun-ripened tomato seasoning to your dish – entirely without additives, salt or flavour enhancers.
Taste and aroma
Lively, concentrated tomato fruit with a clear, stimulating acidity and a lightly savoury depth in the background. Fresher and more fruit-forward than Tomami #1, less umami-round but more zesty. Very economical.
How to use
Refines tomato sauce, bolognese, sugo, soups and stews with real tomato fruit. A splash lifts Bloody Mary, gazpacho, risotto and pasta, an accent seasons marinades, dips and dressings. Wherever a bright, fruity tomato note is wanted, rather than just savoury depth.
Important: After opening, keep refrigerated and well sealed. Longer storage darkens the colour and intensifies the flavour. Dose sparingly, the concentrate is very strong.
Tip: quick arrabbiata
Simmer a tin of San Marzano tomatoes with garlic, olive oil and chilli for 15 minutes, then stir in a generous splash of Tomami #2 Tomate. This lifts the fruit and gives the sauce the lively acidity that makes a good arrabbiata. Serve over fresh spaghetti.
