Simply get more out of all types of vegetables!
Vitamins are the little sensitive ones among nutrients. Cooked for too long and at too high a temperature, or stored for too long, and they're gone. Vitamin C, for example, is destroyed by cooking for too long. Vitamin B is water-soluble and usually disappears down the drain with the cooking water.
Michelin-starred chef Stefan Marquard therefore handles food carefully. He “activates” it before cooking it.
This means that the cooking time for vegetables can be reduced. This preserves vitamins, minerals and trace elements. This treatment significantly enhances the natural flavour, as the spices can penetrate deeply in the raw state.

Use:
For 1 kg of vegetables you need about 12 g of activator. Mix the activator well with the vegetables and then leave to work for about five minutes. The vegetables can then be prepared as desired.
