MAUISU Dark Muscovado Sugar – all-natural cane sugar from Mauritius

An all-natural, unrefined cane sugar produced in the traditional way in Mauritius. The dark-brown, soft moist sugar has a slightly sticky texture and a broad aroma spectrum from caramel to fine liquorice notes. Placed on the market by the producer JoeFrex from Nuremberg in Germany.

How to use

Gives espresso flavour depth. Also ideal for refining marinades, savoury sauces, chutneys, chocolates and pralines. An expressive alternative to refined sugar. A classic in BBQ sauces – the caramel note gives homemade rubs and marinades a dark, full-bodied character.

Goes well with

Tip

If the moist sugar becomes too dry or hard over time, it can be softened again overnight in a bowl with a damp cloth.

What is muscovado sugar?
Muscovado is an unrefined whole-cane sugar with a high molasses content. Characteristic are the dark-brown colour, the sticky-soft texture and the complex aroma with caramel and light liquorice notes.

How does muscovado differ from brown sugar?
Classic brown sugar is often refined white sugar with a little molasses added. Muscovado, by contrast, is naturally brown because it is not refined at all – the full aroma of the sugar-cane plant is preserved.

When should I use it?
When sweetness with character is called for: BBQ marinades, dark cocktails (rum-based), espresso, chocolate mousse, chutneys, full-bodied sauces.

How do I store the sugar?
Dry, well sealed. If it dries out, cover with a damp cloth overnight – the moist texture returns.
