A balanced, mild fruit vinegar from Libeluile in France. The combination of spirit vinegar and ripe raspberry (42% fruit pulp) brings an intense fruit note with a soft acidity. A classic of French vinegar culture.
How to use
It refines leaf salads, beetroot salad and goat's cheese salad. An accent for game dishes, venison, duck and poultry. A few drops over vanilla ice cream, strawberries, sorbet and berries bring a surprising aroma boost. Also a highlight in a fine vinaigrette.
Good to know: shake before use. Once opened, store cool and dark, then it keeps for several months as the vinegar is self-preserving.
Recipe idea: classic raspberry vinaigrette
Shake 2 tbsp raspberry vinegar, 4 tbsp olive oil, 1 tsp Dijon mustard, 1 tsp honey, salt and pepper vigorously in a screw-top jar. Serve over leaf salad with walnuts and goat's cheese croutons.
