Chili Con Carne, a savoury spice blend for the Mexican original
Chili Con Carne is our spice blend for the beloved stew classic, composed by the Hollands in our workshop in Klingenberg am Main. It combines fiery chilies, intense black pepper and aromatic cumin with garlic, oregano, lemon peel and cloves. The character: strong and savoury, with a distinct but easily controllable heat and a surprisingly fresh citrus note. Even a small amount brings plenty of warmth to the dish.
Use
The classic is of course chili con carne, whether with minced beef, as a pulled version or vegetarian with beans and corn. Beyond that, the blend seasons tomato sauces, meatballs, meatloaf, braised dishes and marinades for grilled meat. It also adds a fiery depth to dips, on guacamole or over roasted vegetables.
Important: ease your way into the heat and season in several small portions, as the spices concentrate during simmering.
Chili con carne in four steps
- Brown 500 g of minced beef in hot oil until crumbly, add a diced onion and two garlic cloves and roast along.
- Stir in 2 to 3 tsp of Chili Con Carne and roast briefly until the spices are fragrant.
- Deglaze with a tin of chopped tomatoes and a little stock, add a tin of kidney beans and corn and simmer gently for 30 minutes.
- Season to taste with coarse Luisenhaller deep salt and serve with rice or flatbread.
What is in it?
At its core is a high proportion of chili for the heat, complemented by black pepper and cumin for depth and warmth. Garlic and oregano provide the typically Mexican note, while lemon peel and cloves set a fresh, slightly sweet signature. If you like it even hotter, combine the blend with our red chipotle jalapeño or the extremely hot Chili Bhut Jolokia.

How hot is the chili con carne blend?
Medium-hot. The high chili content provides a distinct but easily controllable heat. Through the dosage you can set the dish from mild to fiery.
Is the blend vegetarian or vegan?
Yes. The blend consists exclusively of spices and is therefore vegan. It is equally suitable for a vegetarian chili sin carne with beans, corn and vegetables.
Does the blend contain salt?
No. It is a pure spice blend without salt. This way you decide the amount of salt yourself, ideally with a high-quality salt such as Luisenhaller deep salt.
How much seasoning do I need for a classic chili con carne?
For 500 g of minced meat, count on about 2 to 3 teaspoons. Stir the blend in early and let it simmer so the aromas develop fully.
