Vitamins are the little sensitive ones among nutrients. Cooked for too long or at too high a temperature, or stored for too long, they're gone.
Michelin-starred chef Stefan Marquard therefore handles food carefully. He “activates” it before cooking it.
This treatment therefore significantly enhances the natural flavour, as the spices can penetrate deeply in their raw state.

Use:
For 1kg of fish or shellfish you need about 12g of activator. Mix the activator well with the food and leave to work for about five minutes. The fish can then be prepared as desired.
Rock salt (Germany), white cane sugar, white pepper, coriander seeds, aniseed, fennel seeds, caraway, thyme.
