Vitamins are the little sensitive ones among nutrients. Cooked for too long or at too high a temperature, or stored for too long, and they're gone. Vitamin C, for example, is destroyed by overcooking. Vitamin B is water-soluble and usually disappears down the drain with the cooking water.
Michelin-starred chef Stefan Marquard therefore handles food with care. He "activates" it before cooking it.
This allows for a reduction in cooking time for vegetables, preserving vitamins, minerals, and trace elements. This treatment significantly enhances the natural flavor, as the spices can penetrate deeply in the raw state.

Use:
For 1 kg of vegetables, you need approximately 12 g of activator. Mix the activator thoroughly with the vegetables and let it work for about five minutes. After that, the vegetables can be prepared as desired.
