African barbecue spice, the exotic BBQ seasoning for dark meat
African barbecue spice gives beef, game and poultry from the grill a deep, lightly floral seasoning with a pleasant heat. We compose the blend in our workshop in Klingenberg am Main. The profile: a powerful opening of long and black pepper, a floral, warm heart of orange blossom, clove and cinnamon bark, a long finish of nutmeg, cardamom and hot paprika. Unusual, dark and unmistakable.
How to use
Apply African barbecue spice generously as a dry rub to beef, game or poultry and let it work in for at least 30 minutes before grilling over direct heat. It is just as good as a marinade with soy sauce, honey and a little sesame oil. It also gives game goulash and braised beef a dark, aromatic depth.
Good to know: Because of the chili and long pepper, start sparingly and increase to taste. In a marinade, do not salt the meat too long so it stays juicy.
Grilled beef steak in 4 steps
- Rub two beef steaks of about 250 g each generously with African barbecue spice.
- Mix one tablespoon of soy sauce, one teaspoon of honey and a little sesame oil and pour the marinade over the meat.
- Marinate the steaks for at least one hour and grill them on the hot grill for 3 to 4 minutes per side.
- Let the meat rest for five minutes and serve it with fresh coriander.
What's in it?
The heat and seasoning come from long pepper, black pepper and chili. The floral, exotic note comes from orange blossom and cloves, plus cinnamon bark, nutmeg and green cardamom. Caraway and hot paprika round the blend off with an earthy note.
