Porcini mushrooms, finely ground for deep mushroom flavour in risotto, sauces and soups

Dried and finely ground porcini mushrooms of top quality from wild harvest. Drying concentrates their aroma, and grinding creates a fine powder that can be dosed precisely. Just one or two teaspoons give a dish a deep, woodland-nutty umami note, entirely without additives.

Intensely earthy and woodland with a nutty depth. As a fine powder the aroma spreads evenly, binds immediately into sauces and stocks and needs no soaking.

How to use

Stir one or two teaspoons directly into risotto, mushroom sauces, soups, marinades and stews. The powder refines pasta, gnocchi and polenta, seasons braised dishes and gives vegetarian dishes a hearty depth. Also in roux, fritters and as an umami boost in stocks.

Important: Use sparingly, the flavour is very concentrated. Unlike whole mushrooms, the powder does not need soaking, it can be stirred in directly. Store dry, airtight and dark so the aroma and colour are preserved.
