How to use
Apple-quince balsamic vinegar is a finishing vinegar for drizzling. A few drops elevate hard cheese and cheese boards, but also vanilla ice cream, strawberries and berries. In savoury cooking it refines salad dressings, game dishes, roast pork and gravies and adds a fruity accent to foie gras and pumpkin soup.
Good to know: Use the vinegar only at the end and sparingly, as its aroma is concentrated. Do not cook it, but drizzle it over just before serving so the fine fruity note is preserved.
Fruity game-salad dressing in 4 steps
- Whisk 2 tbsp mild oil with 1 tbsp apple-quince balsamic vinegar into a base.
- Season with a little salt, pepper and a teaspoon of mustard and balance it with a pinch of honey.
- Fold the dressing through lamb's lettuce, walnuts and thinly shaved pear.
- Arrange the salad and, to finish, drizzle a few more drops of the vinegar over it neat.
