One of the most versatile and well-known spices, used in cuisines on all continents.
Tip from the Dutch:
In a fricassee, do not put the onion, bay leaf and cloves separately, but add a lard onion, ie a bay leaf is pinned to an onion with two cloves.
Use:
Cloves go well with apples, oranges, carrots, pumpkin, onions, red cabbage, beetroot, ham, pork and chocolate. They are also suitable for glazing cured pork such as ham or shoulder of pork.
