Mixed Gingerbread, moist and nutty Christmas Lebkuchen from the Upper Palatinate
Mixed gingerbread brings real Advent spirit to your plate: moist, nutty and with the warm spice you know from the Christmas market. We selected them at Konditorei Rosner in Waldsassen, a family business with its own Lebkuchen bakery. The profile: first honeyed sweetness and roasted hazelnut, then candied orange peel, candied citron and apricot, finishing with a gentle spice warmth. Each bag holds three pieces, baked on wafer.
How to use
Enjoy them plain with coffee or tea, as a small gift, in an Advent calendar or as a dessert ingredient: crumbled over baked apple, vanilla ice cream or yogurt, diced in tiramisu or as a cheesecake base.
Important: Keep the gingerbread well sealed after opening, otherwise it dries out. A slice of apple in the tin keeps it moist for longer.
Gingerbread tiramisu in 5 steps
- Dice 3 pieces of gingerbread and spread them in a dish.
- Briefly heat 200 ml red wine with 1 tsp Ingo's Mulled Wine Spice, steep for 10 minutes, strain and let cool.
- Drizzle the mulled wine over the gingerbread.
- Stir 250 g mascarpone with 250 g quark and 2 tbsp Cinnamon Blossom Sugar until smooth and spread it on top.
- Chill for at least 3 hours and dust with cocoa before serving.

The bag contains three pieces of mixed gingerbread. That makes a nice small gift or a treat for your own Advent plate.
What is the difference between Lebkuchen and Elisenlebkuchen?
Elisenlebkuchen is a German quality grade with at least 25 % nuts and no more than 10 % flour. Our mixed gingerbread is not labelled as Elisen, but contains almost 30 % hazelnuts and almonds. If you want to bake your own, Klingenberger Gingerbread Spice gives you the right seasoning.
How do I store gingerbread?
Store gingerbread cool, dry and airtight. A slice of apple in the tin keeps it moist; the best-before date is printed on the packaging.
Can I use gingerbread in baking and cooking?
Yes, gingerbread works well as a dessert ingredient. Crumbled, it gives crumbles, cheesecake bases and tiramisu a festive note, and in game sauces it adds body and spice.
