Stuffed squid tubes in a savoury marinade, Portuguese antipasti by José Gourmet
A Portuguese speciality for squid lovers: small squid tubes (Loligo vulgaris) by the Lisbon producer José Gourmet, filled with rice and preserved in a savoury marinade of sunflower oil, onion, tomato, red pepper, cloves and bay. Tinned craftsmanship at a high level, a juicy texture, balanced seasoning and a Mediterranean character that makes the tin a little starter.
How to use
On their own as an antipasto on a board or plate, seasoned with a little white wine and fresh herbs. Excellent in pasta, on bruschetta, in Mediterranean salads and as a component in tapas selections. Also a small festive gift for connoisseurs.
Good to know: ready to eat. Enjoy straight from the tin or warm briefly in the marinade, not too long or the tubes turn tough. After opening, keep cool and use within 2 to 3 days.
Recipe idea: spaghetti with squid tubes
Cook 400 g spaghetti al dente. Meanwhile fry 2 cloves of garlic in olive oil, add one tin of squid tubes with the marinade and warm for 3 minutes. Toss the pasta in it and season with fresh parsley, lemon zest and fleur de sel.

Goes well with
From our range these suit it: fleur de sel or flor de sal as a finishing salt before serving and fresh pepper fermented with sea salt for a peppery accent. On the antipasti platter the tin harmonises with our yellowfin tuna in olive oil. For Mediterranean pasta, Franz Keller's grape seed oil adds a fine finish.
